Does the manumission nullify the option if it occurs before she exercises it?

If the husband (the former slave) is manumitted before she chooses separation, her option falls away because the basis for the option was to avert the harm of slavery, which has now been removed, thus voiding the option, similar to how the right to reject a sale is voided if the defect is removed. This is one of the two sayings attributed to Al-Shafi'i.
