The obligation for Zakat on crops and fruits is tied to the fruition or ripening of the crop (Idrak). The emergence of the initial bloom or unripe grapes, and the sprouting of the crop, are considered equivalent to establishing the Nisab (minimum threshold). The fruition is considered equivalent to the completion of the Hawl (the year requirement) in this context.
